Fried rice: Cooked wild rice mix, avocado oil, onions, carrots, baby spinach, kale, Swiss chard, parsley (all vegetables to be chopped), sweet corn, shredded smoked chicken and 2 eggs (fried as an omelette and then chopped).
Method: Heat a small amount of avocado oil in a wok and then saute onions.
Add all chopped vegetables and mix.
Vegetables should not be overcooked. Add shredded smoked chicken and eggs.
After a minute add wild rice mix. Mix all ingredients together and add a little salt and black pepper to taste.
Add a small amount of soy sauce and sesame oil. Mix well and serve with mixed salad.
Condiments: Mango chutney and sweet chilli sauce.
